  1. I think you have everything covered as to what most people will eat. I do wonder if you want to plant spinach and lettuce from seed versus transplanting. Reason I say this is that as soon as the temps get warmer they will begin to bolt. Since it takes a longer time for seeds versus transplanting you will get a quicker harvest if you transplant.

    Also, I would look for heirloom tomatoes that do well in your area since most heirlooms are not bred for disease/pest resistance

    Lastly, I would recommend talking with your local Cooperative Extension Office and talk to one of the Master Gardeners if you haven't already. They will be able to assist you in your journey.

    We definitely intend on planting spinach and lettuce from seed and numerous other items that you mentioned. You are clearly a great wealth of information! I apologize that some of the things I wrote weren't written clearly in my sloppy table.

    After I read what it was you were trying to do for your community I decided to follow both of yours adventure. Gardening is something I enjoy immensely and us gardeners love to help others get started on the right foot.
